Cornbread Stuffing "Cajun Style"

This is a staple for our Thanksgiving table and I wanted to share it with you. Having grown up on the Mississippi-Louisiana line I grew up with the best of both worlds. Good old Southern fare like hot biscuits and fried chicken with a side of collard greens and pecan pie for dessert.

But Thanksgiving was spent in New Orleans at my Aunt Jessie Mae's house. She and Uncle Bill sure knew how to "throw down" in the kitchen. There was always a big pot of gumbo and a roasting pan of delicious cornbread stuffing.

The addition of the sauted shrimp and cayenne pepper gave it just the right kick!

I learned to make this from my mom who NEVER measured anything, I don't either, but I've given it my best.

Cornbread Stuffing with Shrimp
1 large onion
chopped fine
1 large bell pepper
4 stalks of celery
1 bunch green onions

2 boxes of Jiffy cornbread mix
(follow directions for baking)
You can make it from scratch if you like, but this gives a great flavor.

Tip: Add a little oil to pan and heat in the oven until hot. Adding the cornbread mix to the hot grease gives it a nice crispy crust.


2 large boxes of Swanson’s chicken stock



Sage
Seasonings: to taste
Salt
Black Pepper
Cayenne Pepper


1 pound shrimp

6 eggs

¼ stick butter

1 bag Pepperidge Farm Herb Stuffing
The herbs give an amazing flavor
Crumble the cooled cornbread into a large roasting pan with the stuffing mix. Add the chicken stock and 6 eggs. Set aside in a large skillet add some oil and sauté the vegetables until tender. Add to the cornbread mixture and season to taste. Finally heat about 1/4 stick of butter and sauté the shrimp just until pink. Add to the mixture. Bake in a preheated oven at 400 degrees for 45 minutes or to desired consistency.

Giving Thanks

What's It Wednesday #143

This time of year can bring joy as well as sadness. Currently I am in constant prayer for a beloved friend of mine who is fighting for her life. In the middle of her struggle I received  a call saying my step-mom was also gravely ill and needed to be placed in Hospice. Unfortunately, this amazing woman passed away just a few short days later.

As thanksgiving approaches I have been reflecting on the good folks that are in my life. This prompts a perfect opportunity to celebrate for celebration sake. 

Calling a dear friend or family member over for a holiday dessert can brighten anyone's day. Grabbing a cake from the local bakery would make any one feel special.

This Cajun Lemonade has just enough rum and hot sauce to get the party started.


 I will try to reflect on this moment throughout the year every year and make every effort to celebrate the people in my life. Everyone needs to know how much we mean to each other. This holiday season, I am going to start by giving thanks for having each and everyone of you in my life here in Blogland. Have a wonderful and safe Thanksgiving!

Every Time a Bell Rings...

What's It Wednesday #142
You remember the Jimmy Stewart movie "It's A Wonderful Life"? It's a holiday favorite. Around here it's just not Christmas without it. That thought has been poking at my brain for a while now, so I finally did something about it.

Stewart's character was followed around by an angel, well almost. He'd have to save Stewart to earn his wings.

Zuzu's line is my favorite, "Teacher says, 'Every time a bell rings an angel gets its wings". I wanted to bring that special memory to my holiday decorating. 

So here's my pair of wings with tinkly bells that ring each time the door opens or closes. It makes me smile each time. Imagine all the angels I'm gifting wings to for Christmas!

I even made an ornament to match for the tree. See the pair of wings? I love it! Hmm, I might just have to make a few more of these. Have you started ringing in the season, too?

Fallin' for Fall, Again

Flu and cold season came early this year to our home. Not sure what is worse, sick kids or sick husband. Please enjoy this autumn repost!

Only recently I have fallen in love with fall. It all started with a bowl that once belonged to my dear grandmother. 

Recently I pulled out this wonderful bowl that my Uncle Freddie won at a Carnival when he was 11 years old circa 1952. Every year my uncle would win several of these wonderful glass pieces for his mother and his grandmother. We now know these iridescent and highly collectible pieces as "Carnival Glass". 

What struck me most, when pulling out this bowl, was the color. This bowl started the inspiration that led me to decorate our home for the Fall. I found some wonderful fall scented potpourri and I was off to decorate the rest of the house.



So I decided to build on the colors reflected in the bowl. This center piece was the perfect addition to my great-grandmother's dining room table. 



 As I starting building on the colors of Fall I remembered a peacock lamp, my grandmother made when I was little girl. So I whipped it out, tucked the electrical cord inside and placed her gingerly at the end of the table.
Once I found a place for my grandmother's peacock I knew I I needed to find Fall plates. I headed to Marshall's and found these delightful plates and bowls.


Birdcages are my weakness. I added Fall foliage, a black bird and a white pumpkin. I just love white pumpkins.

Then I couldn't decide which pumpkin to get because they were all beautiful. I passed the responsibility off to my five year son and asked him which pumpkins we should get. He said all of them. He was no help. I fell in love with the materials as well as the textures of these beautiful squash-like gourds.




While at the grocery store I picked up some more Fall colors and textures in the fruit, vegetables, and fall bouquets.

I kept the breakfast table simple with white accents. I felt that my mother's china trimmed in silver was perfect. She has had this set since the mid-60s. It's still one of our favorites. The white ceramic pumpkin was ideal for the center piece.


These glass pumpkins, made to look like mercury glass, were the ideal addition to the Baker's Rack in the breakfast nook. 





I guess that you can never have too many pumpkins. That's my story and I am sticking to it. Actually, I just think I have a new Fall obsession, but please don't tell anyone. 

My son, Sebastian, said the house is really cool and that Thanksgiving must be coming. That just warmed my heart so I have decided the Fall is just as wonderful as summer and now it's official, I have fallen in love with Fall.
